No-Bake Chocolate Oatmeal Cookies
2 cups sugar
4 tablespoons cocoa powder
1 stick of butter
1/2 cup of milk
A pinch of salt
1/2 cup of peanut butter
1 teaspoon of vanilla
3 cups of oatmeal

Combine sugar, butter, cocoa, milk and salt in a large saucepan. Bring to boil for 30 seconds. Stir constantly. Let cool. Add peanut butter. Mix well. Add vanilla and oatmeal. Mix well. Drop by teaspoon on wax paper or cookie sheet and chill. I ended up adding additional oats to the 3 cups which helped the cookies set up better.
We made these cookies yesterday and today they were a little lifesaver...one of those pull-my-hair-out days... so nice to be able sneak to the kitchen for a little bit of chocolate (me, not the kids) and great for bribing cranky children into sitting at the table for a few minutes of sugar induced quiet.

these are my husbands favorite cookie! they are a favorite childhood memory of mine too. I don't make them very often because I'll eat half the batch in a day without realizing it. YUM!!
Huh, interesting. How do you store them? In the fridge? I think I'll give them a try this week. Living without AC means avoiding the oven at all costs in the summer!
I love those cookies. I might have to make me some. The kids probably won't eat them but they'll love stirring them together.

I was going to make up a batch of these on Tuesday, but we were perilously low on PB, so I'll have to wait till I've restocked to cupboard. I hear you on needing a cool chocolaty treat on those hard days! And they are at least a little bit nutritious, right? :)
